Today I wanted to share a
healthy guilt-free recipe so I don’t turn all of my fans obese lol. This
one-pan chicken fajita quinoa is soo good and perfect for an easy
weekday dinner or even Sunday meal prep! I like to top it with a simple
but creamy avocado sauce, some green onions, and fresh parsley. Quinoa
is really good for you, and you honestly won’t miss the traditional
tortilla because it is so good on its own! I hope you guys enjoy it!!

| Ingredients |
1 Tablespoon Olive Oil
2 Boneless Skinless Chicken Breasts (Sliced into strips)
1 Large Onion, Diced
3-4 Peppers, Sliced
1/2 Cup Red Quinoa
1/2 Cup White Quinoa
2 Cups Chicken Stock
2 Tablespoons Tomato Sauce or Ketchup
Spices:
1 Tablespoon Chili Powder
1 Teaspoon Paprika
1 Teaspoon Ground Cumin
½ Teaspoon Onion Powder
½ Teaspoon Garlic Powder
¼ Teaspoon Cayenne Pepper
Salt and Pepper to Taste
Sauce:
2 Avocados
½ Cup Sour Cream (or Greek Yogurt)
2 Cloves Garlic
Juice of 1 Lime
Salt and Pepper to Taste

In a large saute pan, warm olive oil over medium-high heat. Add sliced
chicken and season with salt and pepper. Cook just until the outside is a
slight brown. Do not cook through. Remove chicken from pan and set
aside.
To the pan and its remaining oils, add diced onion and cook until translucent. Add garlic and cook another 2 minutes.
Add peppers, chicken, and all the spices. Season again with salt and pepper then stir well.
Add quinoa, chicken broth, and tomato sauce. Bring to a boil then reduce
heat to a medium simmer. Cover and allow to cook for 15 – 20 minutes or
until the quinoa is fluffy and no liquids remain.
Avocado Sauce:
In a blender or food processor, blend avocado, sour cream, garlic, lime
juice, salt and pepper to taste, until smooth and creamy.
Top finished quinoa with avocado sauce, green onions, and cilantro.
